Asian Style Wild Blueberry and Rock Crab Salad

Ingredients:
- 1 English Style cucumber, cut into “noodles”
- 1 carrot; julienned
- 2 green onions, cut on the bias
- 1 cup fresh wild blueberries
- 1 lb rock crab meat
- ½ tbsp sesame seeds
Dressing:
- 1 clove garlic, minced
- 1 tbsp fresh, ginger, minced
- ¼ tsp fresh cracked black pepper
- ½ cup rice wine vinegar
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 1 tsp fish sauce
- ½ tbsp sesame seeds
- Pinch of red pepper flakes
Instructions:
- Begin by combining of the dressing ingredients into a bowl and whisking to emulsify.
- In a large bowl combine the cucumber, carrot, green onion, wild blueberries, crab meat together and gently toss.
- Top with the dressing and the 1/2 tbsp of sesame seeds.
- Chill for 1/2 hour before serving. Toss again before serving.
Yield: Serves 4
