Trail mix is a great way to have a high-protien snack that keeps you going even through the toughest Monday slump. Oftentimes, trail mix gets a bad rap (too high in fat, hidden sugars, high in calories). While it's true that nuts are high in fat, that the milk chocolate-covered raisins are candy, and that it's a high-calorie snack, that doesn't mean it's a bad option for a snack! In fact, used in moderation, it can be an ideal snack on the go or at the home office! The key is making wise choices when building your own snack mix. What to include in your own trail mix: 1. Nuts - obviously nuts are a huge hit. If you're looking for keeping the sodium levels down in your diet, opt for unsalted versions of your favourite nuts. It's also really easy to roast your own, so it might be a great option to get your hands on some raw nuts instead of roasted nuts (oftentimes they have added oils and fats that they have been roasted in). 2. Seeds - I can't believe the nutritional benefits that seeds can give! Again, try to find unsalted, raw seeds (you can always add a bit of a seasoning mix to it after where you can control how much of what goes in the mix!) and be sure to incorporate them into your mixture. 3. Dried fruits - dried wild blueberries, cranberries, raisins, apple slices, etc. There are a HUGE amount of options out there for adding the sweet, chewy bit to your mixture. Again, if you're looking for a healthier option, smaller pieces and lower-sugar fruits may be your best bet (for example, dried mangos may have a higher sugar content than dried wild blueberries). 4. Your Extras - This is where you can (in moderation) add some delicious options to change up your mix. Wild Blueberry & Lemon White Chocolate CakeINGREDIENTS 1 cup butter room temperature1¼ cup white sugar½ cup brown sugar4 eggs2 tsp vanilla1 tsp almond extract3 cups all purpose flour1 tbsp baking powder½ tsp salt1 cup buttermilk2 tbsp lemon zest½ cup fresh lemon juice1½ cup frozen wild blueberries1 tbsp all purpose flour1 cup white chocolate chipsLemon Cream Cheese Butter Frosting1 8 oz block of cream cheese½ cup butter room temperature2 tsp lemon extract or 2 tbsp fresh lemon juice3 cups icing sugar1-2 tbsp heavy creamINSTRUCTIONS Preheat the oven to 350°FCream together butter, white sugar, and brown sugar using a hand or stand mixer.Add eggs in one at a time, beating just until combined.Add vanilla extract and almond extract and combine.In a separate bowl, mix together buttermilk, lemon juice and lemon zest.In another bowl, mix flour, baking powder and salt. Add ⅓ of the flour mixture to the mixer, followed by ½ of the buttermilk mixture. Repeat, ending with the flour.Place frozen wild blueberries in a bowl and toss with the 1 tbsp of flour. Add to the batter, along with the white chocolate chips. Fold to incorporate.Line two 8-inch cake pans with parchment paper and grease. Divide the batter between the two pans evenly.Bake at 350°F for 30 minutes.Lemon Cream Cheese Butter FrostingPlace the cream cheese and butter into the bowl of the stand mixer, and use the paddle attachment to cream the two together.Add lemon extract and mix. Add icing sugar 1 cup at a time. Add heavy cream as neded to keep the icing fluid and smoothBeat for 3 - 4 minutes until light and airy.Place one of the cooled cakes on a dessert plate and spread ⅓ of the icing on top. Add the second cake layer and place the remaining icing on top.
