Wild Blueberry Bruschetta with Grilled Bread and Mascarpone

Ingredients
For the Bruschetta:
- 1 baguette, sliced into 12–16 pieces
- 2 tbsp olive oil
- 1 cup fresh wild blueberries
- 1/4cup fresh basil, finely chopped
- 1 tbsp lime zest
- 1 tbsp lime juice
- 1 tbsp honey
- Salt and black pepper to taste
For the Mascarpone Spread:
- 1 cup mascarpone cheese
- 1 tbsp lime juice
- 1 tbsp honey
- 1/2 tsp vanilla extract
Instructions
- Prepare the Grilled Bread:
- Preheat your grill to medium-high heat.
- Brush both sides of the baguette slices with olive oil.
- Grill the bread slices for about 2 minutes on each side, or until they are crisp and have grill marks. Remove from the grill and set aside.
- Make the Wild Blueberry Topping:
- In a medium bowl, combine the wild blueberries, fresh basil, lime zest, lime juice, honey, salt, and black pepper. Toss gently to mix well.
- Prepare the Mascarpone Spread:
- In a small bowl, mix together the mascarpone cheese, lime juice, honey, and vanilla extract until smooth and creamy.
- Assemble the Bruschetta:
- Spread a generous layer of the mascarpone mixture on each slice of grilled bread.
- Top with a spoonful of the wild blueberry mixture, ensuring an even distribution of blueberries and basil.
- Serve:
- Arrange the bruschetta on a serving platter.
- Garnish with additional lime zest and a few whole basil leaves if desired.
