Wild Blueberry Bruschetta with Grilled Bread and Mascarpone

Ingredients

For the Bruschetta:

  • 1 baguette, sliced into 1216 pieces
  • 2 tbsp olive oil
  • 1 cup fresh wild blueberries
  • 1/4cup fresh basil, finely chopped
  • 1 tbsp lime zest
  • 1 tbsp lime juice
  • 1 tbsp honey
  • Salt and black pepper to taste

For the Mascarpone Spread:

  • 1 cup mascarpone cheese
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Grilled Bread:
  2. Preheat your grill to medium-high heat.
  3. Brush both sides of the baguette slices with olive oil.
  4. Grill the bread slices for about 2 minutes on each side, or until they are crisp and have grill marks. Remove from the grill and set aside.
  5. Make the Wild Blueberry Topping:
  6. In a medium bowl, combine the wild blueberries, fresh basil, lime zest, lime juice, honey, salt, and black pepper. Toss gently to mix well.
  7. Prepare the Mascarpone Spread:
  8. In a small bowl, mix together the mascarpone cheese, lime juice, honey, and vanilla extract until smooth and creamy.
  9. Assemble the Bruschetta:
  10. Spread a generous layer of the mascarpone mixture on each slice of grilled bread.
  11. Top with a spoonful of the wild blueberry mixture, ensuring an even distribution of blueberries and basil.
  12. Serve:
  13. Arrange the bruschetta on a serving platter.
  14. Garnish with additional lime zest and a few whole basil leaves if desired.
