Wild Blueberry Baked Brie

Ingredients
- 1 wheel of brie (8 oz)
- 1/2 cup fresh or frozen wild blueberries
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
- 1 tsp fresh thyme leaves ( or 1/4 tsp dried)
- 1 tbsp chopped pecans or walnuts
- Pinch of salt
- Puff pastry sheet (optional)
- Crackers, sliced baguette or apple slices for serving
Instructions
For No Pastry Version
- preheat oven to 375
- Prepare brie: place the brie in a parchment lined baking dish or small oven safe skillet.
- Score the top of the rind with a knife in a criss cross pattern to help the topping seep in.
Make Blueberry Balsamic Sauce;
- In a small saucepan over medium heat, combine blueberries, balsamic vinegar, thyme, and honey or maple syrup.
- Simmer for 5-7 minutes until thick and syrupy, gently smashing a few berries. stir in a few pinch of salt and nuts.
Top and Bake
- spoon the sauce over the brie and bake 12-15 minutes or until the cheese is melty and soft inside ( it will puff slightly)
- serve with crackers, crostini, or apple slices.
Optional: Puffed pastry wrapped version
- Roll out the puff pastry and place the brie wheel in the center.
- Spoon half of the wild blueberry sauce on top, fold the pastry over and seal.
- brush with an egg wash ( 1 beaten egg).
- Bake at 400 degrees for 20-25 minutes until golden brown.
- Let rest 5 minutes before serving and top with the extra warm sauce.
