Wild Blueberry Protein Pancakes

Ingredients
- 1 1/2 cup cottage cheese
- 4 eggs
- 1 tsp vanilla extract
- 2 tbsp sugar
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tbsp baking powder
- 1 cup Wild Blueberries
- butter for frying
Instructions
- Combine the following ingredients in a blender (a bowl will work as well but will produce a pancake with more texture); cottage cheese, eggs, vanilla, sugar, baking powder, almond flour and coconut flour. Blend well.
- Let the mixture sit for 15 minutes; this is very important as the coconut flour needs to absorb some of the liquids.
- Gently stir in the wild blueberries.
- Melt butter in a frying pan or on a griddle over medium high heat.
- Use a quarter cup measure to drop the batter onto the hot surface.
- Cook until bubbles appear on the surface of the pancake, turn and cook until light and fluffy.
- Serve with topping of choice.
