Wild Blueberry Protein Pancakes

Ingredients

  • 1 1/2 cup cottage cheese
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tbsp baking powder
  • 1 cup Wild Blueberries
  • butter for frying

Instructions

  1. Combine the following ingredients in a blender (a bowl will work as well but will produce a pancake with more texture); cottage cheese, eggs, vanilla, sugar, baking powder, almond flour and coconut flour. Blend well.
  2. Let the mixture sit for 15 minutes; this is very important as the coconut flour needs to absorb some of the liquids.
  3. Gently stir in the wild blueberries.
  4. Melt butter in a frying pan or on a griddle over medium high heat.
  5. Use a quarter cup measure to drop the batter onto the hot surface.
  6. Cook until bubbles appear on the surface of the pancake, turn and cook until light and fluffy.
  7. Serve with topping of choice.
