Wild Blueberry Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup frozen butter, grated
  • 1/2 cup buttermilk
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tsp almond extract
  • 1 egg
  • 1 cup frozen wild blueberries ( dusted with 1 tbsp flour)
  • 1 tbsp buttermilk
  • 2 tbsp raw sugar

Instructions

  1. Combine the all-purpose flour, sugar, baking powder and salt in a bowl.
  2. Add the Frozen grated butter and combined with a fork.
  3. In a separate bowl combine, buttermilk, lemon juice, egg, vanilla, almond extract, and egg. Mix well.
  4. Add to liquid to the dry mixture. Mix until combined then fold in the wild blueberries.
  5. Form the dough into a round that is 1 inch thick. Cut into 6 individual pieces and place on a parchment lined baking sheet.
  6. Brush the top of each scone with buttermilk and sprinkle with the raw sugar.
  7. Bake in a preheated 400-degree oven for 25 minutes or until golden brown.
