Wild Blueberry & Turkey Panini

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup goat cheese
  • 1 tbsp maple syrup
  • 1/4 cup Frozen wild blueberries
  • butter
  • 4 slices panini bread
  • 8 ounces roast turkey
  • 6 slices bacon, cooked
  • 1 avocado, sliced
  • mozzarella cheese

Instructions

  1. Combine the mayo, goat cheese, maple and wild blueberries and mix well.
  2. Spread a generous portion of wild blueberry mayo on one slice of bread, top with the turkey, bacon and avocado, add wild blueberry mayo the second slice and place that on top of the sandwich, butter both sides of the bread and place in a panini press or grill in a hot skillet, turning and cooking until both sides are golden and the sandwich has been warmed through.
